Shopska Salad

Shopska Salad
Ingredients:
1 onion
500 g tomatoes
150-200 g mature cow’s or sheep’s white cheese, sliced
50 ml oil
1 small chili pepper
1 cucumber
salt
Preparation:

Peel the onion and cut it in small pieces. Wash the tomatoes, peel them and cut them in slices, mix them with the onions, pour oil over them, put some salt and add the peeled cucumber, cut into cubes. Slowly stir all ingredients, sprinkle grated or crumbled cheese and a small chili pepper cut into circles over them. This delicious salad is often an additive to maize flour meals (maize-flour bread, green vegetable pie), baked or boiled potatoes, fried bread slices, kebapches (pieces of grilled minced meat of longish shape) and similar meals.

Green Salad with Eggs

Green Salad with Eggs
Ingredients:
1 Green Salad or Lettuce
1 Bunch of Radishes
3-4 Sticks of Green Onion
2 Hard Boiled Eggs
3 Spoons Oil
3 Spoons Vinegar
Salt
Preparation:
  • wash and clean the green onion, the salad and the radishes
  • cut them all on small pieces and put in a cup
  • cut one of the eggs and add to the salad
  • mix the sallad and add the vineger, the oil and the salt
  • grate the next egg and put it over the portion before serving

Piquant Potato Salad

Piquant Potato Salad
Ingredients:
400 gr boiled potatoes
2 boiled eggs
2 peppers /possible canned/
2 sticks of gren onion
40 ml vegetable oil
20 ml vinegar
salt
Preparation:
  • Mix the oil and the vinegar in a bowl.
  • Add the potatoes and eggs choped on cubes
  • Add the onion on small rings and the salt
  • Mix the salad.
  • Garnish with sliced eggs, or pickles or red pepper
  • Serve cold with white pepper.

Mushroom Salad

Mushroom Salad
Ingredients:
300 g mushrooms
4 small heads of onion
1 spoon mashed tomatoes
100 g ham
50 ml white wine
laurel leave
black pepper
1 clove of garlic
1 lemon
parsley
2 tomatoes
4 leaves of lettuce
oil
salt
Preparation:
  • Chop the onion on small pieces and stew it in the oil on a small fire.
  • Add the washed, peeled and choped mushrooms, the salt, mashed tomatoes, the laurel leave, the black pepper, the wine and the mashed garlic.
  • Stew everything on small fire for about 10 mins.
  • Chop and add theham into the mix, and aftrer the ham worms up – remove the mix from the fire.
  • spread some parsley and add lemon juice.
  • Serve on flat plates on lettuce leaf.
  • Garnish with small pieces of tomato or lemon.

Nikosia Salad

Nikosia Salad
Ingredients:
300 gr gabbage
100 gr carrots
150 gr tomatoes
100 gr mayonaise sauce
100 gr ham
2 pcs. olives
dill
parsley
cooking oil
vinegar
Preparation:
  • stripe down the cabbage and squeeze it with salt and grather down the carrots
  • mix the cabbage and carrots together with the cooking oil and the vinegar and add fine choped parsley and dill
  • pour over the mayonaise sauce.
  • cover the salad with slises of tomatoes with ham stripes.
  • decorate with sitk of dill and olive.
